What I Gave Up And What I Got Instead
I gave up the density of San Francisco the particular energy of a city that runs on ambition and proximity. I gave up same-day everything. I gave up the comfort of knowing how things work.
I want to be honest about this, because the "I moved abroad and everything got better" story is missing something. Some things genuinely got harder. The winters on the Basque coast, when the tourists leave and the restaurants close early and it's wind, storms, and gray Atlantic water, are quieter than anything I knew in SF. Some days that quietness is exactly right. Some days it isn't.
What I got: work that is genuinely rooted in a place. The ability to source what I sell from people whose names I know. A business that grew from actually living here not from reading about it, not from a research trip, but from showing up and staying.
And this: the sense that the life I'm building and the work I'm doing are the same thing. That what I care about good food, place, the way hospitality actually works when it's done well is what WHISK is built around.
